Mega Hot Cross Buns

The Easter holidays are here, and that means I can make an abundance of Hot Cross Buns. We love eating Hot Cross Buns in our house. My hubby and I love the traditional fruit ones. The kids love the choc chip variety. But whatever delicious bun it is, we love smothering them with a thick layer of butter.

If you don’t know what a Hot Cross Bun is, it is a spiced sweet bun made with sultanas or raisins and is marked with a cross on the top. Traditionally it is eaten on Good Friday but they do start to appear in stores as early as January. You can read more about the tradition of a Hot Cross Bun here. We do resist the temptation and don’t buy them until it is closer to Easter. It is hard, but they are worth the wait.

Easter Vanilla Surprise Cupcakes

I love a good cupcake. They are the best when they are soft and fluffy, not too dry and just the right crumb texture. Sometimes I like a cupcake without icing on top but when it has the perfect icing and a sprinkling of a little decoration, they are a special treat.

Most weekends I always bake a batch of cupcakes. I enjoy testing new recipes and making sure that a cupcakes result is a perfect little patty pan full of goodness.

With Easter just around the corner, I thought a special little cupcake would be a lovely baking treat to celebrate the joys of Easter.

I came up with a light and moist vanilla cupcake with a special surprise inside.

Reeses Easter Choc Chip Cookie Slice

It’s nearly Easter time, and I think I have indulged in copious amounts of chocolate already. I just can’t go past those aisles of Easter eggs and not pick up a couple of bags. The mini eggs are soo easy to eat, just unwrap and the chocolate goodness is there. My favourites at the moment are the popping candy eggs, mmm it’s a party in your mouth egg! Oh, let me not forget the mini eggs that have no wrapping. I could eat a truck load of M&M’s speckled eggs, Milky bar mini eggs and Reeses Pieces Peanut Butter eggs.

Now since the Easter eggs have started appearing in the supermarket, I have come home with a few packets of something different each week. My kitchen cupboard is getting full of some amazing eggs. I am looking forward to using these eggs to do some Easter baking.

When I stumbled upon a packet of the Reeses Pieces Peanut Butter eggs and Reeses Peanut Butter Mini Reester Bunnies, I knew that I had to bake something with these.

Shrove Tuesday (Pancake Day)

Yes, yes, yes!! It’s Shrove Tuesday! In Australia, it is known as Pancake Day.

For two years now we have celebrated Pancake Day and enjoyed indulging in some pancakes for dinner. I make up a whole heap of yummy fluffy pancakes, and we cover them in a variety of delicious condiments, strawberries, Hershey’s chocolate sauce, whipped cream and whatever else we can use.

Did you know that today is World Nutella Day! I had heard about it but didn’t know when the actual day was. Rice Bubble Christmas Slice

Hi there!

I have been a bit quiet around this place lately. Christmas is a busy time of year at our house, and there isn’t much time for anything else. I did get a chance yesterday to head into the kitchen though and make a lovely Rice Bubble Christmas Slice.

If you have noticed in the shops, they are selling Christmas m&m’s in a bucket. An abundance of red and green m&m’s. I grabbed two buckets the other day and after nearly eating all of one bucket (with the help of my kids of course) I decided I should use them for some baking as well.

So I came up with a cheerful Christmassy Rice Bubble Christmas Slice.

Combine in a large bowl, 4 cups of Rice Bubbles, 1 cup of icing sugar and 1 cup of quick oats

Melt in a small saucepan, 250 gms copha and 2 teaspoons of honey

Add the melted copha and honey into the dry ingredients and stir until thoroughly combined.

Add 1 cup of red and green m&m’s and gently stir into the mix.

Once combined, pour into a baking paper lined baking dish and gently press down until level.

Place in the fridge to set.

Rice Bubble Christmas Slice

A cheerful and yummy Christmas Slice

Serves: 15
Ingredients
  • 4 cups of Rice Bubbles
  • 1 cup of icing sugar
  • 1 cup of quick oats
  • 250 gms copha
  • 2 tsps of honey
  • 1 cup of red and green m&m's
Instructions
  1. Line a baking dish with baking paper and set aside.
  2. Combine in a large bowl Rice bubbles, icing sugar and quick oats.
  3. Melt in a small saucepan the copha and honey until completely melted.
  4. Once copha and honey have melted, add to the dry ingredients and mix until combined.
  5. Add the red and green m&m's and gently mix.
  6. Then pour the mixture into the baking dish and gently press down until level.
  7. Place in the fridge until set.
  8. Once set, take a large knife and carefully cut into squares.
  9. Keep stored in the fridge for up to 2 weeks.
  10. Enjoy!

This slice is easy to make and a great treat to have sitting in the fridge. My kids love it and are a taking a square in their lunchbox to school each day. Hubby loves it too so its happy tummies all around. Now the only problem for me with storing the slice in the fridge is that every time I go to the fridge it’s there looking at me and I just want to keep eating it.
