Sunday morning baking

cakehnt1 applecake So as I promised here are the recipes for these two cakes that I baked for Sunday baking sunday. The first cake recipe came from a gorgeous handmade magazine called Hundreds and Thousands. The two girls that put together this great mag are Mezz from mezzmakesstuff and Taz from butterandbuntings. The pages are full of interesting things to read such as recipes, craft ideas and places they visit. Now the second cake I adapted from a recipe that was over at the lovely Annette from igiveyoutheverbs. Her recipe was a Date, Carrot and Honey Loaf. I didn’t have dates or honey what I did have was apple, coconut and carrots. But I thought adding carrots to apple and coconut didn’t sound like a good combination. So I replaced the dates with apple and replaced carrot with coconut. I didn’t have enough honey either so I just used brown sugar. I followed the recipe exactly the same just some of the ingredients were different. It turned out pretty good. The kids weren’t to keen on it though they much preferred the Hundreds and Thousands Cake.

Hundreds and Thousands Cake

Ingredients
  • 75gms melted butter or coconut oil
  • 200ml honey (I didn’t have enough honey so I used 2/3 cup sugar)
  • 200ml milk
  • 2 eggs
  • 2 generous splashes of vanilla extract (I used 2 tsps of vanilla essence)
  • 200gms plain flour
  • 1 tsp baking soda
  • 1 block of cream cheese for the icing (I didn’t have cream cheese so I just did a vanilla icing mix with icing sugar, butter and milk)
  • 1/3 cup honey
Instructions
  1. Preheat oven to 160°C fan forced/ 180°C
  2. Sieve the baking soda and flour into a large bowl or mixer.
  3. Add all the other ingredients then the melted butter/oil. Mix well until combined.
  4. Pour the batter into 2 greased and lined round cake tins (I just poured the cake batter into one round tin)
  5. Bake for 15-20 mins or until a skewer comes out clean.
  6. Cool on a wire rack.
  7. Icing: Beat the cream cheese until smooth. Add 1/3 cup honey and a dash of vanilla. Mix well and taste. Spread on one cake then put another cake on top and spread the rest of the icing over cake. (I just iced the top of my whole cake as I made just one. I didn’t halve it.)
  8. Sprinkle with hundreds and thousands.
  9. Enjoy!

Apple and Coconut Cake

Ingredients
  • 1 1/2 cups of chopped apple
  • 2/3 cup brown sugar
  • 1 cup of water
  • 60 gms butter chopped
  • 2 tsps vanilla essence
  • 2 cups self raising flour, sifted
  • 1/2 cup coconut
  • Raw sugar
Instructions
  1. Preheat oven to 160°C fan forced /180°C
  2. Line a loaf pan with baking paper.
  3. Place chopped apples, brown sugar and water in a large saucepan.
  4. Stir over a medium heat until the apples have softened.
  5. Add the chopped butter and stir until melted. Take off the heat and add vanilla essence.
  6. Add the sifted flour and coconut and gently mix until combined.
  7. Pour the mixture into the loaf pan and spread out until even.
  8. Sprinkle over the top with raw sugar.
  9. Bake for 30-40mins or until the skewer comes out clean.
  10. Cool on a wire rack.
  11. Enjoy!

cakehnt2This cake was a success and the kids really enjoyed eating it. It was a simple and easy cake to make and it turned out soft and moist. The kids have requested that I make this again, please muuummm!!applecake1Now this cake was pretty good. The apples were nice and soft. The texture was alright but next time I would like to make the recipe again and maybe change it abit. I would also like to try making the recipe that I adapted this from and see if there is any texture difference between the two. cakehnt3 This is what was left of the Hundreds and Thousands Cake, just enough for the kids to take to school today for their lunch boxes.
