Egg Free Sugar Cookies

Ingredients
  • 125 gms of butter
  • ½ cup sugar
  • ½ tsp vanilla essence
  • 3 tlbs milk
  • 1½ cups of plain flour
  • ¼ tsp salt
  • 2 tsps baking powder
Instructions
  1. Preheat oven to 150°C fan forced/170°C.
  2. Cream together the butter and sugar with an electric mixer until light and fluffy. Add vanilla and milk. Beat well.
  3. Then add the flour, salt and baking powder. Mix well.
  4. On a floured surface roll out the dough until the desired thickness, about .6cm or just under 1 cm. Cut out shapes using any type of shape cutter.
  5. Bake about 8-10 minutes.
  6. I baked the cookies for 8 mins. They were just barely done and were nice and soft.
  7. Once you have taken them out of the oven, wait a couple of minutes then transfer to a wire rack to cool.
  8. Once cool, then you can decorate them any way you want.
  9. Enjoy!

Even after baking, the cookies stayed in the star shape and didn’t come out misshapen. The cookies were lovely and soft and a great all-rounder cookie recipe. Vanilla pudding chocolate chip cookies

These are a really easy and delicious choc chip cookie. I don’t really like my cookies too dry or crunchy especially when they have yummy choc chips in them. The cookies from this recipe are nice and soft. You can definitely eat more than one.

Cream butter and sugars until they are a light colour and creamy

Then add in vanilla pudding mix, 2 eggs and vanilla

Add the sifted flour, baking soda and salt

Mix in a cup of chocolate chips, until just combined

all mixed and ready for the tray

Place a tablespoon of dough on a baking tray and bake for 10-12 mins

Take out of the oven when they are lightly golden and cool on a cooling rack

You can wait until these cookies are cool before you eat them but every once in a while grab one after they have been out of the oven for a few seconds. They are very nice warm and it is very hard to stop eating them.

  • ¾ cup brown sugar
  • ¼ cup sugar
  • 100g packet Vanilla Instant pudding mix (I use Cottee's)
  • 2 eggs
  • 1 tsp vanilla essence
  • 2¼ cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 160°C fan forced/ 180°C normal oven. Line baking tray with baking paper then set aside.
  2. Cream butter and sugars together until they are a light colour and creamy.
  3. Then add in vanilla pudding mix, 2 eggs and vanilla, mix until combined.
  4. Add the sifted flour, baking soda and salt, mix together.
  5. Mix in a cup of chocolate chips, until just combined.
  6. Place a tablespoon of dough on a baking tray and bake for 10-12 mins.
  7. Remove cookies from the oven and let cool slightly on tray. Then transfer cookies to a cooling rack and cool completely.

Gummy Bear Thumbprint Cookies

I have really wanted to get back into baking goodies for the kids lunch boxes. Over the christmas school holidays I stopped baking cakes, slices etc. The kids didn’t eat as much and I found it was a waste if I baked something every second day like I do for when they are at school. I did bake a cake here and there but not as often.

To ease myself back into baking, I wanted to make something that was quick and easy. I found this recipe on pinterest and decided to give it a go.

This recipe makes 15 cookies

Ingredients
  • ½ cup (1 stick) butter, softened
  • ¼ cup brown sugar, packed
  • 1 egg yolk
  • 1 tsp vanilla essence/extract
  • 1 cup all-purpose flour
  • a pinch of salt
  • gummy bears, I used 2 per cookie
Instructions
  1. In a bowl, cream together butter and brown sugar. Add egg yolk and stir in vanilla. Mix in flour and salt until combined. Cover the bowl with plastic wrap and place in the freezer for 10 minutes. This will help by preventing the centre of the cookies from cracking.
  2. Preheat the oven to 150°C. Line a baking tray with baking paper.
  3. Roll cookies into a tablespoon sized ball. Arrange on tray making sure you leave some space between each cookie. Using your thumb, press a deep hole in the centre of the cookie. Make it big enough so the gummy bears won't spill out once melted.
  4. Bake cookies for 8-10 minutes, or until they are almost done. Take them out of the oven and them place 2 gummy bears in each cookie. Then put the tray back in the oven and cook for a further 2 minutes until the gummy bears have melted.
  5. Let the cookies cool on tray for a few minutes then transfer to a wire rack to cool completely.
