Vanilla pudding chocolate chip cookies

This recipe makes about 24 cookies.

  • 250g butter
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 100g packet Vanilla Instant pudding mix (I use Cottee's)
  • 2 eggs
  • 1 tsp vanilla essence
  • 2¼ cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chocolate chips
  1. Preheat oven to 160°C fan forced/ 180°C normal oven. Line baking tray with baking paper then set aside.
  2. Cream butter and sugars together until they are a light colour and creamy.
  3. Then add in vanilla pudding mix, 2 eggs and vanilla, mix until combined.
  4. Add the sifted flour, baking soda and salt, mix together.
  5. Mix in a cup of chocolate chips, until just combined.
  6. Place a tablespoon of dough on a baking tray and bake for 10-12 mins.
  7. Remove cookies from the oven and let cool slightly on tray. Then transfer cookies to a cooling rack and cool completely.
